My 100th Post! BUI: Trav and Jules' Diabeetus on Stick

First all I just wanted to say thanks everyone for reading! I can't believe I hit such a bloggie milestone. To all of my new followers (and old ones too) please feel free to introduce yourself!

A bit ago I made these cookies- sooo delish

  Which got my friend Travis and I thinking....so we came up with  these which are cookie dough balls (no egg in the batter- I used a bit of milk instead), stuffed with a mini oreo ball, dipped in chocolate and pretzel peices or Diabeetus on Stick for short.  I also had a major eff up and at the end with the chocolate so I just smushed some mini M&Ms on then instead of chocolate.

To make these I used my favorite recipe for chocolate chip cookies:
  • 1 cup (2 sticks) butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs*
  • 2 teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon of salt
  • 2 cups semisweet chocolate chips
  1. Preheat oven to 350 degrees
  2. Cream together butter, white sugar, and brown sugar until smooth (this tastes amazing by itself). Beat in the eggs one at a time, then stir in vanilla.  Dissolve baking soda in hot water, add to the batter along with the salt. Stir in flour and chocolate chips. Drop by large spoonfuls onto ungreased pans.
  3. Bake for about 10 mins or until edges are nicely browned.
** Now if you are not going to bake these and make diabeetus treats then do not add eggs. Instead mix everything together and then add a few splashes of milk before adding chocolate chips to make the dough moist.**


Ok now you have made the cookie dough so we need to make the oreo truffles to put inside them.
Oreo Truffles
  • Food processor
  • 1 package of Oreos
  • 1 stick of cream cheese
  • 1 bag chocolate
Put oreos in food processor until they form a powder the consistency of coffee grounds. Break up the cream cheese and add to the the Oreo powder. Blend until it forms a dough ball. Afterwards it helps to put this in the freezer for a bit so that it is easier to scoop out the balls.  Form into balls and dip into melted chocolate (Ive found making a double boiler with a glass bowl and a pan of water works the best).

    To make diabeetus treats use a 1/2 tablespoon measuring spoon to scoop out oreo truffles. 

 Take some cookie dough and stretch it around the truffle until completely covered. Put the stick in the middle of the ball of delishness, dip into chocolate and roll into broken pretzel pieces. Freeze to set up the chocolate. Enjoy!

Happy Valentine's Day: A Baking Under the Influence Edition

Emily and I wanted to make a treat for Valentine's Day and check out how working with fondant would be.

Emily spotted this idea from Sweetapolita.We kindaaa cheated a bit and bought sugar cookie dough and icing becasue we were short on time but let me tell you the results were delish!

Here is what you will need:
Sugar cookie dough
Cookie Cutters
Icing
Fondant
Food coloring gel
Rubber stamp

Cut out the sugar cookies into whatever shape you desire. Bake them and let them cool.  Prepare the fondant, let me explain- ours was rock hard and had microwave instructions on the tub it came in.  We warmed ours up and it softened.  We kneaded pink food coloring gel into it and rolled it out into 1/8th inch thickness. We cut out the heart shapes and used a small bit of icing on each cookie to adhere the fondant to each cookie.  Once assembled we stamped the cookies with the rubber stamp to create the script effect.






We drank Pink Flamingo red wine which I cant find a picture of for some reason!

Baking Under The Influence: Caramel Apple Cupcakes and Donuts

    First off I wanted to say I've noticed I have gotten a bunch new followers so I wanted to say "hi"!

 Sometimes you feel like drinking a bunch of wine and baking things, if you are me this happens a lot.  So I'd like to introduce you to the first in a series of posts that are what I shall call BUI (Baking Under the Influence). 
    So a little bit ago Fooding with Emily and I went to the Fiestaware Sale and decided that we needed a snack for the undgodly hour of wake up.  A few days beforehand, Emily found a recipe in Rachel Ray's Magazine and we decided this would be it.








Here is what you will need for this nomfest:
  • 1 bottle of your favorite wine (optional)
  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs, at room temperature
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2 rome apples (about 1 pound), peeled and shredded ( we used the food processor to shred)
  • 1 1/2 cups chewy caramel candies
  • 1 tablespoon heavy cream

Enjoy bottle of wine while completing the tasks below:

Arrange a rack in the upper third of the oven and preheat to 350°. Line a cupcake pan with baking liners. In a large bowl, whisk together the flour, baking powder, cinnamon and salt.



In a medium bowl, whisk together the eggs, brown sugar and granulated sugar until smooth. Whisk in the oil and vanilla. Stir into the flour mixture until just combined; stir in the apples.

Spoon the batter into the prepared pan until almost full. Bake until golden and a toothpick inserted in the center comes out dry, 25 to 30 minutes. Transfer to a rack to cool completely.







    In a small, microwavable bowl, combine the caramels and cream. Microwave for 1 minute at medium power, then stir; repeat in 30-second intervals until melted and smooth. Let cool. Spread the frosting generously on the cooled cupcakes.
    The only bad thing we both could say about these was the the caramel "frosting" will rip your emeffing teeth out if you eat it after it has cooled a bit. It is definitely still delish and edible but you have to eat it very carefully ha. I would suggest a brown sugar or spiced icing that wont rip your teeth out.
